Tannic acid is a polyphenolic organic compound widely present in plants. In terms of chemical properties, tannic acid can form insoluble complexes with proteins, alkaloids, and various metal ions due to the presence of a large number of phenolic hydroxyl groups in its molecular structure. For example, its aqueous solution can form a blue black precipitate when it comes into contact with iron salts. This characteristic of binding to proteins is the basis for many of its applications and sensory experiences.‌‌

Mainly used for tanning leather, it is also used in industries such as medicine, ink, printing and dyeing, rubber and metallurgy, as well as water treatment.
